Fresh, juicy, never boring – here’s your new grapefruit & avocado summer salad staple.

Ingredients (serves 2):
– 2 handfuls crisp lettuce (endive, frisée or lollo bianco)
– 1 chicory
– 1 SummerStar Ruby grapefruit
– 1 avocado
– 2 tbsp olive oil
– 1 tbsp white wine vinegar
– 1 tsp honey
– Salt & black pepper
– 50g feta cheese
– 2 tbsp pine nuts
Directions:
1️⃣ Wash & tear lettuce. Remove chicory stem, separate leaves, add to salad.
2️⃣ Peel grapefruit, cut into segments, add to bowl.
3️⃣ Peel & slice avocado, mix in.
4️⃣ Whisk oil, vinegar, honey, salt & pepper – drizzle over salad.
5️⃣ Crumble feta on top, toast pine nuts in a pan & sprinkle.
