Ingredients:

2 fillets of white fish (like cod or haddock)

1 SummerStar Ruby grapefruit, segmented

1 cup corn kernels (fresh or grilled)

Half of an avocado, diced

Half a cup of pickled onions

2–3 spring onions, sliced

Fresh coriander leaves

1–2 red chillies, thinly sliced (optional for heat)

4 small flour tortillas

Sour cream or yoghurt for the base

Olive oil, salt, and pepper for seasoning
Instructions:
1️⃣ Prepare the fish – Season fillets with olive oil, salt, and pepper, then grill or pan-sear until cooked through. Break into bite-sized pieces.
2️⃣ Assemble the base – Spread a thin layer of sour cream or yoghurt onto each tortilla.
